Description

A delightful and cozy dessert featuring caramelized fresh pineapple with warm spices, perfect for serving over vanilla ice cream.


Ingredients

  • 600 g fresh pineapple, peeled, cored, and cut into chunks
  • 60 g unsalted butter
  • 80 g brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • Pinch of salt
  • 30 g chopped pecans or walnuts, optional

Instructions

  1. Cut the pineapple into bite-sized chunks and pat them dry with paper towels.
  2. Melt the butter in a large skillet over medium heat. Add the brown sugar, cinnamon, nutmeg, ginger, and salt. Stir for 1–2 minutes, until the sugar begins to dissolve and the mixture becomes syrupy.
  3. Add the pineapple chunks to the skillet. Cook for 8–10 minutes, turning occasionally, until the pineapple is golden brown and coated in the buttery spice sauce.
  4. Stir in the vanilla and lemon juice. Cook for another 1–2 minutes until the sauce is glossy and slightly thickened. Stir in the chopped pecans or walnuts if using.
  5. Spoon the warm spiced pineapple into serving bowls. Top with a scoop of vanilla ice cream and drizzle with the warm caramel sauce from the skillet. Sprinkle with toasted coconut or fresh mint if desired.

Notes

  • Fresh pineapple gives the best caramelized flavor, but canned pineapple can also be used. Drain it very well first.
  • Add ½ tsp orange zest for a brighter citrus flavor.
  • For a richer dessert, sprinkle with toasted coconut and chopped pecans.
  • Serve immediately while the pineapple is warm and the ice cream is melting.
