Description

Ingredients

  • 4 cups corn kernels, fresh or frozen
  • 2 tablespoons butter
  • ½ small onion, finely diced
  • 3 cloves garlic, minced
  • 1 small jalapeño, finely chopped
  • ½ cup heavy cream
  • ¼ cup cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1½ teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper, or more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese, optional

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the onion and jalapeño. Cook for 2–3 minutes until softened.
  3. Add the garlic and cook for 30 seconds until fragrant.
  4. Stir in the corn and cook for 4–5 minutes.
  5. Pour in the heavy cream and add the cream cheese. Stir until the cream cheese melts and the mixture becomes smooth.
  6. Add the cheddar cheese, Cajun seasoning, smoked paprika, cayenne pepper, black pepper, and salt. Stir until the cheese is completely melted.
  7. Reduce the heat and simmer for 2–3 minutes, stirring occasionally, until thick and creamy.
  8. Taste and adjust the Cajun seasoning or cayenne for more heat.
  9. Garnish with parsley and Parmesan cheese, if desired.
  10. Serve hot as a flavorful side dish.
