Description
A flavorful and creamy side dish featuring corn with a spicy Cajun twist.
Ingredients
- 4 cups corn kernels, fresh or frozen
- 2 tablespoons butter
- ½ small onion, finely diced
- 3 cloves garlic, minced
- 1 small jalapeño, finely chopped
- ½ cup heavy cream
- ¼ cup cream cheese, softened
- ½ cup shredded cheddar cheese
- 1½ teaspoons Cajun seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper, or more to taste
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 2 tablespoons chopped fresh parsley
- 2 tablespoons grated Parmesan cheese, optional
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the onion and jalapeño. Cook for 2–3 minutes until softened.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the corn and cook for 4–5 minutes.
- Pour in the heavy cream and add the cream cheese. Stir until the cream cheese melts and the mixture becomes smooth.
- Add the cheddar cheese, Cajun seasoning, smoked paprika, cayenne pepper, black pepper, and salt. Stir until the cheese is completely melted.
- Reduce the heat and simmer for 2–3 minutes, stirring occasionally, until thick and creamy.
- Taste and adjust the Cajun seasoning or cayenne for more heat.
- Garnish with parsley and Parmesan cheese, if desired.
- Serve hot as a flavorful side dish.
Notes
- Adjust the level of spiciness by adding more or less cayenne pepper.
- For a vegetarian option, ensure the cheese used is rennet-free.
