Ingredients

  • 1 pound ground beef
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the Brussels sprouts, chili powder, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until the Brussels sprouts are tender and slightly caramelized.
  5. Add the soy sauce and apple cider vinegar, stirring to combine. Cook for another 2-3 minutes to heat through.
  6. Remove from heat and garnish with sliced green onions before serving.

Notes

  • For a milder version, reduce or omit the cayenne pepper.
