A flavorful meal featuring spicy ground beef and Brussels sprouts, perfect for a quick dinner.
Ingredients
- 1 pound ground beef
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the Brussels sprouts, chili powder, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until the Brussels sprouts are tender and slightly caramelized.
- Add the soy sauce and apple cider vinegar, stirring to combine. Cook for another 2-3 minutes to heat through.
- Remove from heat and garnish with sliced green onions before serving.
Notes
- For a milder version, reduce or omit the cayenne pepper.
- Add cooked rice or quinoa to the skillet for a heartier meal.
