Description
A delicious and spicy dish featuring sweet potatoes glazed with a hot honey mixture, perfect for a side or a main dish.
Ingredients
- 2 large sweet potatoes (about 1.5 pounds), peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cayenne pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, in a small saucepan over medium heat, combine honey, apple cider vinegar, smoked paprika, and garlic powder. Stir until heated through and well combined, about 2-3 minutes.
- Once the sweet potatoes are done, remove them from the oven and drizzle the hot honey mixture over them. Toss to coat evenly.
- Return the glazed sweet potatoes to the oven and roast for an additional 5 minutes to allow the glaze to set.
- Remove from the oven and garnish with chopped fresh parsley if desired. Serve warm.
Notes
- For a sweeter glaze, increase the honey to 1/3 cup.
- Add a sprinkle of crushed red pepper flakes for extra heat.
