Ingredients

  • 2 large sweet potatoes (about 1.5 pounds), peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cayenne pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, in a small saucepan over medium heat, combine honey, apple cider vinegar, smoked paprika, and garlic powder. Stir until heated through and well combined, about 2-3 minutes.
  6. Once the sweet potatoes are done, remove them from the oven and drizzle the hot honey mixture over them. Toss to coat evenly.
  7. Return the glazed sweet potatoes to the oven and roast for an additional 5 minutes to allow the glaze to set.
  8. Remove from the oven and garnish with chopped fresh parsley if desired. Serve warm.

  • For a sweeter glaze, increase the honey to 1/3 cup.
