Ingredients
- 3 large cucumbers, thinly sliced
- ¼ cup red onion, thinly sliced
- 2 green onions, chopped
- 2 tablespoons roasted peanuts, crushed
- 1 tablespoon sesame seeds
- Fresh cilantro, chopped, optional
- 3 tablespoons creamy peanut butter
- 1½ tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1–2 teaspoons chili crisp or chili garlic sauce
- 1 small garlic clove, minced
- 1–2 tablespoons warm water, as needed
Instructions
- Prepare the cucumbers: Slice the cucumbers thinly and place them in a large bowl. Add the red onion and green onions.
- Make the sauce: Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili sauce, and garlic. Add warm water a little at a time until smooth and pourable.
- Combine: Pour the spicy peanut sauce over the cucumbers and toss until everything is evenly coated.
- Chill: Refrigerate for 15–30 minutes to let the flavors develop.
- Garnish: Sprinkle with crushed peanuts, sesame seeds, and cilantro.
- Serve: Enjoy cold as a refreshing side dish or light snack.

- Adjust the spiciness by varying the amount of chili sauce used.
- For a vegan version, ensure the honey is replaced with a suitable alternative.
