A refreshing cucumber salad tossed in a spicy peanut sauce, perfect as a side dish or light snack.

Ingredients

  • 3 large cucumbers, thinly sliced
  • ¼ cup red onion, thinly sliced
  • 2 green onions, chopped
  • 2 tablespoons roasted peanuts, crushed
  • 1 tablespoon sesame seeds
  • Fresh cilantro, chopped, optional
  • 3 tablespoons creamy peanut butter
  • 1½ tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 12 teaspoons chili crisp or chili garlic sauce

  • 12 tablespoons warm water, as needed

Instructions

  1. Prepare the cucumbers: Slice the cucumbers thinly and place them in a large bowl. Add the red onion and green onions.
  2. Make the sauce: Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili sauce, and garlic. Add warm water a little at a time until smooth and pourable.
  3. Combine: Pour the spicy peanut sauce over the cucumbers and toss until everything is evenly coated.
  4. Chill: Refrigerate for 15–30 minutes to let the flavors develop.
  5. Garnish: Sprinkle with crushed peanuts, sesame seeds, and cilantro.
  6. Serve: Enjoy cold as a refreshing side dish or light snack.

Notes

  • Adjust the spiciness by varying the amount of chili sauce used.
  • For a vegan version, ensure the honey is replaced with a suitable alternative.
