A delicious recipe for Spinach and Cheese Squares that combines the flavors of spinach, cheddar, mozzarella, and Parmesan in a savory baked dish.
Ingredients
- 10 oz frozen chopped spinach, thawed and squeezed very dry
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup whole milk
- ½ cup unsalted butter, melted
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish and line it with parchment paper.
- Prepare the spinach: Thaw the spinach completely and squeeze out as much moisture as possible.
- Heat a small skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add garlic and cook for another 30 seconds.
- In a large bowl, whisk together the eggs, milk, and melted butter.
- Add flour, baking powder, salt, pepper, Italian seasoning, and red pepper flakes. Stir until just combined.
- Fold in the spinach, cooked onion and garlic, cheddar, mozzarella, and Parmesan.
- Pour into the baking dish and spread evenly.
- Bake for 30–35 minutes, until the center is set and the top is lightly golden.
- Let cool for 10–15 minutes, then cut into squares.
Notes
- Make sure the spinach is squeezed very dry. Excess moisture can make the squares soft and watery.
- For an extra cheesy top, sprinkle another ¼ cup of mozzarella over the batter before baking.
