Ingredients

  • 10 oz frozen chopped spinach, thawed and squeezed very dry
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes, optional

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish and line it with parchment paper.
  2. Prepare the spinach: Thaw the spinach completely and squeeze out as much moisture as possible.
  3. Heat a small skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add garlic and cook for another 30 seconds.
  4. In a large bowl, whisk together the eggs, milk, and melted butter.
  5. Add flour, baking powder, salt, pepper, Italian seasoning, and red pepper flakes. Stir until just combined.
  6. Fold in the spinach, cooked onion and garlic, cheddar, mozzarella, and Parmesan.
  7. Pour into the baking dish and spread evenly.
  8. Bake for 30–35 minutes, until the center is set and the top is lightly golden.
  9. Let cool for 10–15 minutes, then cut into squares.

Notes

  • Make sure the spinach is squeezed very dry. Excess moisture can make the squares soft and watery.
  • For an extra cheesy top, sprinkle another ¼ cup of mozzarella over the batter before baking.
