A delicious and healthy recipe for Spinach and Cheese Stuffed Portobello Mushrooms, perfect for a satisfying meal or appetizer.
Ingredients
- 8 large portobello mushrooms, stems removed and cleaned
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup breadcrumbs (optional for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and red pepper flakes. Stir in the cooked spinach mixture until well combined.
- Place the portobello mushrooms, gill side up, on a baking sheet lined with parchment paper.
- Spoon the spinach and cheese mixture evenly into each mushroom cap, pressing down gently to pack it in.
- If using, sprinkle breadcrumbs on top of the stuffed mushrooms for added crunch.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

- For a meatier option, add cooked and crumbled Italian sausage or ground turkey to the cheese mixture.
