Ingredients

  • 8 large portobello mushrooms, stems removed and cleaned
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup breadcrumbs (optional for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and red pepper flakes. Stir in the cooked spinach mixture until well combined.
  5. Place the portobello mushrooms, gill side up, on a baking sheet lined with parchment paper.
  6. Spoon the spinach and cheese mixture evenly into each mushroom cap, pressing down gently to pack it in.
  7. If using, sprinkle breadcrumbs on top of the stuffed mushrooms for added crunch.
  8. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
