Description

A delicious and gooey Spinach Grilled Cheese Sandwich that combines fresh spinach with creamy cheeses for a delightful meal.


Ingredients

  • 8 slices sourdough or sandwich bread
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon Italian seasoning

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Add the garlic and cook for about 30 seconds.
  2. Add the spinach and cook for 2–3 minutes, until wilted. Remove from the heat and let the spinach cool slightly. Squeeze out any excess moisture.
  3. In a bowl, combine the spinach, cream cheese, mozzarella, cheddar, salt, black pepper, and Italian seasoning.
  4. Spread the spinach-cheese mixture evenly over 4 slices of bread. Top with the remaining bread slices.
  5. Melt the remaining butter in a skillet over medium-low heat.
  6. Place the sandwiches in the skillet and cook for 3–4 minutes per side, gently pressing with a spatula, until the bread is golden brown and the cheese is melted.
  7. If the bread browns too quickly before the cheese melts, reduce the heat to low and cover the skillet for 1–2 minutes.
  8. Slice in half and serve immediately while hot and gooey.

Notes

  • For an especially crisp crust, spread a very thin layer of mayonnaise on the outside of each bread slice before grilling instead of butter.
