Description
A delicious and gooey Spinach Grilled Cheese Sandwich that combines fresh spinach with creamy cheeses for a delightful meal.
Ingredients
- 8 slices sourdough or sandwich bread
- 2 cups fresh spinach, roughly chopped
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- 2 tablespoons butter
- 1 clove garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon Italian seasoning
Instructions
- Melt 1 tablespoon of butter in a skillet over medium heat. Add the garlic and cook for about 30 seconds.
- Add the spinach and cook for 2–3 minutes, until wilted. Remove from the heat and let the spinach cool slightly. Squeeze out any excess moisture.
- In a bowl, combine the spinach, cream cheese, mozzarella, cheddar, salt, black pepper, and Italian seasoning.
- Spread the spinach-cheese mixture evenly over 4 slices of bread. Top with the remaining bread slices.
- Melt the remaining butter in a skillet over medium-low heat.
- Place the sandwiches in the skillet and cook for 3–4 minutes per side, gently pressing with a spatula, until the bread is golden brown and the cheese is melted.
- If the bread browns too quickly before the cheese melts, reduce the heat to low and cover the skillet for 1–2 minutes.
- Slice in half and serve immediately while hot and gooey.
Notes
- For an especially crisp crust, spread a very thin layer of mayonnaise on the outside of each bread slice before grilling instead of butter.
