Description

A quick and delicious stir-fried dish featuring tender bok choy and savory ground beef, perfect for a weeknight meal.

Ingredients

  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 small onion, thinly sliced
  • 4 cups baby bok choy, halved or chopped
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • ½ tsp black pepper
  • ¼ cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ cup beef broth
  • 1 tsp cornstarch
  • 1 tbsp sesame seeds (for garnish)
  • 1 green onion, sliced (for garnish)
  • Red pepper flakes, optional

Instructions

  1. Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, beef broth, and cornstarch. Set aside.
  2. Brown the beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground beef and cook for 5–7 minutes, breaking it apart as it cooks. Drain excess grease if needed.
  3. Add aromatics: Add onion, garlic, and ginger. Stir-fry for 1–2 minutes until fragrant.
  4. Add the vegetables: Add the bell pepper and bok choy. Cook for 3–4 minutes, stirring frequently, until the bok choy is crisp-tender and the leaves begin to wilt.
  5. Add the sauce: Pour the prepared sauce into the skillet. Toss everything together and cook for 2–3 minutes, until the sauce thickens and coats the beef and vegetables.
  6. Finish: Stir in the green onions and black pepper. Taste and adjust the seasoning if needed.
  7. Serve: Sprinkle with sesame seeds and extra green onion. Serve hot over steamed white rice or noodles.

Notes

  • For a spicier dish, add red pepper flakes to taste.
  • Feel free to substitute ground beef with ground turkey or chicken for a lighter option.
  • This dish can be served over rice or noodles for a complete meal.
