Description

A refreshing and delightful Strawberry Basil Lemonade Poke Cake that combines the flavors of lemon, strawberries, and basil for a unique dessert experience.


Ingredients

  • 1 box lemon cake mix
  • Ingredients called for on the cake mix box (usually eggs, water, and vegetable oil)
  • 1 cup fresh strawberries, finely chopped
  • ½ cup granulated sugar
  • ¼ cup fresh lemon juice
  • ¼ cup water
  • 68 fresh basil leaves, finely chopped
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1½ cups whipped topping
  • ½ cup fresh strawberries, sliced
  • Fresh basil leaves, for garnish
  • Lemon zest, optional

Instructions

  1. Prepare the lemon cake according to the package directions. Pour into a 9×13-inch baking pan and bake according to the package instructions.
  2. While the cake is baking, combine strawberries, sugar, lemon juice, water, and basil in a saucepan over medium heat.
  3. Simmer for 5–7 minutes, stirring occasionally, until the strawberries soften.
  4. Mix cornstarch with 1 tbsp water. Stir it into the strawberry mixture and cook for another 1–2 minutes, until slightly thickened. Remove the basil leaves and let the mixture cool.
  5. Let the cake cool for about 10–15 minutes. Using the handle of a wooden spoon, poke holes evenly across the cake.
  6. Spoon the strawberry-basil lemonade mixture over the cake, allowing it to soak into the holes.
  7. Refrigerate for at least 1 hour.
  8. Beat the cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped topping.
  9. Spread the frosting evenly over the chilled cake.
  10. Top with sliced strawberries, fresh basil, and a little lemon zest.
  11. Chill for another 1–2 hours before slicing and serving.
