Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ½ cup strawberry puree
  • ½ cup finely chopped fresh strawberries
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • ¼ cup strawberry puree (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 12 tbsp heavy cream or milk, as needed (for frosting)

Instructions

  1. Preheat oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Beat softened butter and sugar until light and fluffy, about 2–3 minutes. Add the eggs one at a time, then mix in vanilla.
  4. Mix in the strawberry puree. Add the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Fold in the chopped strawberries.
  5. Divide the batter between the prepared pans and smooth the tops. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Beat the butter until creamy. Gradually add powdered sugar, then mix in strawberry puree and vanilla. Add cream or milk, 1 tablespoon at a time, until smooth and spreadable.
  8. Place one cake layer on a serving plate and spread with frosting. Add the second layer and frost the top and sides.
  9. Garnish with fresh strawberries and a few small strawberry slices. Refrigerate for about 30 minutes before serving for cleaner slices.
