Description

Strawberry Cheesecake Chimichangas are a delightful dessert that combines the creamy goodness of cheesecake with the crispy texture of fried tortillas, topped with fresh strawberries and a sweet glaze.

Ingredients

  • 8 medium flour tortillas (8-inch)
  • 8 oz (225 g) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • ¼ cup sour cream (optional)
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Vegetable oil, for frying
  • ½ cup strawberry preserves or strawberry sauce
  • ½ cup fresh strawberries, sliced
  • ¼ cup powdered sugar
  • 1–2 tablespoons milk
  • 2 tablespoons crushed graham crackers

Instructions

  1. Prepare the filling: Beat softened cream cheese, powdered sugar, vanilla extract, and sour cream until smooth and creamy. Gently fold in diced strawberries.
  2. Fill the tortillas: Place approximately 3 tablespoons of cheesecake filling in the center of each tortilla.
  3. Roll: Fold in the sides, then roll tightly like a burrito to seal the filling inside.
  4. Prepare cinnamon sugar: Combine granulated sugar and cinnamon in a shallow bowl.
  5. Fry: Heat about 1 inch of vegetable oil in a deep skillet to 350°F (175°C). Fry the chimichangas in batches for 2–3 minutes per side until golden brown and crispy.
  6. Coat: Remove from the oil, drain briefly on paper towels, and roll in cinnamon sugar while still warm.
  7. Prepare the glaze: Mix powdered sugar with milk until smooth and pourable.
  8. Decorate: Drizzle with strawberry sauce and glaze. Top with fresh strawberries and crushed graham crackers.
  9. Serve: Enjoy warm while the outside is crispy and the cheesecake filling is creamy.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Adjust the sweetness of the filling by adding more or less powdered sugar.
  • These can be made ahead of time and reheated in the oven for a few minutes.
