Description
Delicious strawberry cheesecake donuts filled with creamy cheesecake and topped with a sweet strawberry glaze.
Ingredients
- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup granulated sugar
- 2 large eggs
- ½ cup whole milk
- ½ cup sour cream
- ¼ cup unsalted butter, melted
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- ½ cup finely diced strawberries
- 1 cup powdered sugar (for glaze)
- 2 tbsp strawberry puree
- 1 tbsp milk, as needed
- ½ tsp vanilla extract (for glaze)
- ½ cup diced fresh strawberries (for topping)
- ¼ cup graham cracker crumbs (for topping)
- 2 tbsp melted white chocolate, optional (for topping)
Instructions
- Preheat the oven to 350°F. Lightly grease a 12-cavity donut pan.
- Whisk together the flour, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk the eggs, milk, sour cream, melted butter, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and gently stir until just combined. Do not overmix.
- Spoon or pipe the batter into the donut cavities, filling each about ⅔ full.
- Bake for 12–15 minutes, or until the donuts spring back lightly when touched. Cool in the pan for 5 minutes, then transfer to a rack.
- Beat the softened cream cheese and powdered sugar until smooth. Add the vanilla and heavy cream and beat until creamy. Fold in the diced strawberries.
- Once completely cool, make a small hole in the side of each donut. Pipe the cheesecake filling into the center.
- Whisk the powdered sugar, strawberry puree, and vanilla together. Add milk a little at a time until you have a thick but pourable glaze.
- Dip the tops of the filled donuts into the strawberry glaze and let the excess drip off.
- Sprinkle with graham cracker crumbs and top with diced fresh strawberries. Drizzle with melted white chocolate if desired.
- Refrigerate for 20–30 minutes to slightly firm the cheesecake filling before serving.
Notes
- Ensure the donuts are completely cool before filling them to prevent the filling from melting.
- Adjust the consistency of the glaze by adding more or less milk as needed.
- For a richer flavor, use full-fat cream cheese.
