Ingredients

  • 1½ cups unsalted butter, softened
  • 2½ cups granulated sugar
  • 8 oz cream cheese, softened (for pound cake)
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup diced fresh strawberries
  • 8 oz cream cheese, softened (for cheesecake filling)
  • ¼ cup granulated sugar (for cheesecake filling)
  • 1 large egg yolk (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup powdered sugar (for strawberry glaze)
  • 2 tablespoons strawberry puree (for strawberry glaze)
  • 1 teaspoon lemon juice (for strawberry glaze)
  • ½ teaspoon vanilla extract (for strawberry glaze)

Instructions

  1. Preheat the oven to 325°F. Grease and flour a 10-inch Bundt pan thoroughly.
  2. In a large bowl, beat the butter, sugar, and 8 oz cream cheese until light and fluffy, about 3–4 minutes.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture. Mix just until combined.
  6. Gently fold in the diced strawberries.
  7. For the cheesecake filling, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.
  8. Pour half of the pound cake batter into the prepared Bundt pan. Spoon the cheesecake filling into the center, keeping it away from the sides of the pan.
  9. Carefully cover with the remaining cake batter and smooth the top.
  10. Bake for 75–90 minutes, or until a toothpick inserted into the cake portion comes out clean.
  11. Let the cake cool in the pan for 15 minutes, then carefully invert it onto a wire rack to cool completely.
  12. Whisk together the powdered sugar, strawberry puree, lemon juice, and vanilla until smooth.
  13. Drizzle the strawberry glaze over the cooled cake. Garnish with fresh strawberries if desired.
