Ingredients

  • 190 g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 115 g unsalted butter, softened
  • 150 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120 g sour cream or plain Greek yogurt
  • 150 g fresh strawberries, diced
  • 1 tbsp all-purpose flour, for coating strawberries
  • 115 g cream cheese, softened
  • 50 g granulated sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 80 g fresh strawberries, sliced (optional)
  • 12 tbsp granulated sugar (optional)

Instructions

  1. Preheat oven: Heat oven to 175°C. Grease and line a 23 × 13 cm loaf pan with parchment paper.
  2. Prepare the strawberries: Pat the diced strawberries dry. Toss them with 1 tablespoon flour and set aside.
  3. Make the cream cheese filling: Beat cream cheese and sugar until smooth. Add egg yolk, vanilla, and flour. Mix until creamy.
  4. Make the bread batter: Whisk flour, baking powder, baking soda, and salt in a bowl.
  5. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  6. Mix in the sour cream. Gradually add the dry ingredients and stir just until combined.
  7. Gently fold in the floured strawberries.
  8. Layer: Spread about half of the batter into the loaf pan. Spoon the cream cheese mixture down the center, keeping it away from the edges. Cover with the remaining batter.
  9. Add sliced strawberries on top if desired.
  10. Bake: Bake for 55–65 minutes, or until a toothpick inserted into the bread portion comes out clean. If the top browns too quickly, loosely cover with foil during the last 15–20 minutes.
  11. Cool in the pan for 15 minutes, then transfer to a wire rack and cool completely before slicing.

Notes

  • Ensure strawberries are well-coated with flour to prevent sinking in the batter.
  • For a sweeter topping, sprinkle additional sugar on the sliced strawberries before baking.
