Description
A delicious and moist Strawberry Cream Cheese Loaf Cake topped with a creamy strawberry glaze, perfect for any occasion.
Ingredients
- ½ cup unsalted butter, softened
- 4 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup sour cream
- 1 cup fresh strawberries, finely diced and patted dry
- 1 tablespoon all-purpose flour, for coating the strawberries
- 4 ounces cream cheese, softened (for glaze)
- 1 cup powdered sugar
- 2 tablespoons strawberry puree
- ½ teaspoon vanilla extract (for glaze)
- 1–2 tablespoons milk, as needed (for glaze)
Instructions
- Preheat your oven to 350°F. Grease a 9-by-5-inch loaf pan and line it with parchment paper.
- In a large bowl, beat the softened butter and cream cheese until smooth and creamy. Add the granulated sugar and beat for 2–3 minutes until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture in two additions, alternating with the sour cream. Mix on low speed just until combined.
- Toss the diced strawberries with 1 tablespoon of flour and gently fold them into the batter.
- Spoon the batter into the prepared pan and smooth the top.
- Bake for 55–70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 15 minutes before lifting it onto a wire rack to cool completely.
- In a medium bowl, beat the softened cream cheese until smooth. Beat in the powdered sugar, strawberry puree, and vanilla extract. Add milk until the glaze is thick but pourable.
- Drizzle the glaze over the cooled loaf and garnish with fresh strawberry slices if desired. Let the glaze set before cutting into slices.
Notes
- Pat the strawberries dry to avoid a soggy center.
- Use room-temperature ingredients for better blending.
- Don’t overmix the batter to keep the loaf tender.
- Check the center carefully to ensure it is fully baked.
- For a stronger strawberry flavor, use thick strawberry puree in the glaze.
