Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 2 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup strawberry-flavored cereal (like Strawberry Shortcake Crunch)

Instructions

  1. Preheat your oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
  5. Gradually add ¾ cup of granulated sugar and continue to beat until well combined. Mix in the vanilla extract.
  6. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the remaining ¼ cup of sugar and continue whipping until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  8. Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  9. Arrange the sliced strawberries evenly over the cheesecake mixture.
  10. Cover and refrigerate for at least 4 hours, or overnight for best results.
  11. Before serving, crush the strawberry-flavored cereal into small pieces and sprinkle it over the top of the cheesecake for a crunchy finish.
  12. Carefully remove the sides of the springform pan and slice the cheesecake into wedges.
