Description

Strawberry Crunch Cheesecake Tacos are a delightful dessert combining creamy cheesecake filling, fresh strawberries, and a crunchy topping, all nestled in crispy taco shells.

Ingredients

  • 4 medium flour tortillas
  • 3 tbsp unsalted butter, melted
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • Cooking spray
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 tsp lemon juice (optional)
  • 15 Golden Oreo cookies
  • 2 tbsp strawberry gelatin powder
  • 2 tbsp unsalted butter, melted
  • ¼ cup freeze-dried strawberries, crushed (optional)
  • 1 cup fresh strawberries, diced or sliced
  • ¼ cup strawberry syrup or glaze
  • Whipped cream, optional

Instructions

  1. Preheat the oven to 350°F.
  2. Cut each tortilla into two rounds using a bowl or round cutter, making 8 pieces.
  3. Brush both sides with melted butter.
  4. Combine sugar and cinnamon in a small bowl.
  5. Sprinkle the cinnamon-sugar mixture over both sides of the tortillas.
  6. Drape each tortilla over two bars of an oven rack or place it between the cups of an inverted muffin tin to create a taco shape.
  7. Bake for 8–12 minutes, until golden and crisp.
  8. Allow the shells to cool completely.
  9. Beat the softened cream cheese until smooth and creamy.
  10. Add powdered sugar, vanilla extract, and lemon juice.
  11. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  12. Gently fold the whipped cream into the cream cheese mixture.
  13. Refrigerate for 20–30 minutes to help the filling firm up.
  14. Crush the Golden Oreos into small crumbs.
  15. Add the strawberry gelatin powder and crushed freeze-dried strawberries, if using.
  16. Pour in the melted butter.
  17. Mix until the crumbs are evenly coated and slightly clumpy.
  18. Set aside.
  19. Transfer the cheesecake filling into a piping bag or a resealable plastic bag with the corner cut off.
  20. Pipe the filling into each cooled taco shell.
  21. Add diced or sliced fresh strawberries.
  22. Sprinkle generously with the strawberry crunch topping.
  23. Drizzle with strawberry syrup or glaze.
  24. Add whipped cream if desired.
  25. Refrigerate the assembled tacos for 10–15 minutes before serving.
  26. For the crispiest shells, assemble them just before serving.

Notes

  • For a more intense strawberry flavor, use fresh strawberries in the filling.
  • These tacos are best served immediately after assembly for maximum crunch.
  • Feel free to customize the toppings with other fruits or sauces.
