Description

A delicious and visually stunning Strawberry Crunch Golden Oreo Drip Cake that combines layers of strawberry cake with a creamy frosting and a crunchy topping.


Ingredients

  • 2½ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon strawberry extract (optional)
  • 1 cup whole milk
  • Pink food coloring (optional)
  • 24 Golden Oreo cookies
  • 1 (3 oz) package strawberry gelatin (such as Jell-O)
  • 4 tablespoons melted unsalted butter
  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 23 tablespoons heavy cream
  • 1 cup white chocolate chips
  • ⅓ cup heavy cream
  • 810 Golden Oreo cookies (for decoration)
  • Fresh strawberries (for decoration)
  • Crushed strawberry crunch topping (for decoration)
  • Frosting swirls (for decoration)
  • White chocolate drizzle (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and line three 8-inch cake pans.
  2. Whisk together the flour, baking powder, and salt.
  3. Beat the butter and sugar until light and fluffy (3–4 minutes).
  4. Add the eggs one at a time, then mix in the vanilla and strawberry extract.
  5. Alternate adding the dry ingredients and milk until just combined.
  6. Add a few drops of pink food coloring if desired.
  7. Divide evenly among the pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool completely before frosting.
  9. Pulse the Golden Oreos into coarse crumbs and mix with the strawberry gelatin powder.
  10. Stir in the melted butter until crumbly.
  11. Beat the butter and cream cheese until smooth, then gradually add the powdered sugar.
  12. Mix in the vanilla and enough heavy cream for a fluffy consistency.
  13. Spread frosting between each cake layer and apply a thin crumb coat, then chill for 20 minutes.
  14. Frost the cake completely with the remaining frosting and press the strawberry crunch mixture onto the sides of the cake.
  15. Heat the heavy cream until just simmering, pour over the white chocolate chips, let stand for 2 minutes, then stir until smooth.
  16. Cool for 10–15 minutes until slightly thickened, then spoon or pipe around the top edge to create drips.
  17. Pipe large frosting swirls around the top, place halved Golden Oreo cookies between the swirls, add fresh strawberries in the center, sprinkle extra strawberry crunch over the top, and finish with an extra drizzle of white chocolate.
