Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs
  • 2 tsp vanilla extract
  • ½ tsp almond extract, optional
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup sour cream
  • ½ cup crushed pineapple, well drained
  • 1 cup fresh strawberries, finely chopped and patted dry
  • 2 tbsp all-purpose flour, for coating the fruit
  • 1½ cups powdered sugar (for glaze)
  • 2–3 tbsp pineapple juice or milk (for glaze)
  • 1 tsp vanilla extract (for glaze)
  • 1 tbsp melted butter, optional (for glaze)

Instructions

  1. Preheat the oven: Heat oven to 325°F. Grease and flour a 10-inch Bundt pan thoroughly.
  2. Cream the butter and sugar: Beat softened butter and sugar for 4–5 minutes, until pale and fluffy.
  3. Add the eggs: Add the eggs one at a time, mixing well after each addition. Stir in vanilla and almond extract if using.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
  5. Build the batter: Add the dry ingredients to the butter mixture in three additions, alternating with sour cream. Mix just until combined. Do not overmix.
  6. Prepare the fruit: Toss the chopped strawberries and drained pineapple with 2 tablespoons flour. Gently fold the fruit into the batter.
  7. Bake: Spoon the batter evenly into the prepared Bundt pan and smooth the top. Bake for 70–85 minutes, or until a toothpick inserted into the thickest part comes out with a few moist crumbs.
  8. Cool: Let the cake cool in the pan for 15–20 minutes, then carefully turn it onto a wire rack. Cool completely.
  9. Make the glaze: Whisk powdered sugar, pineapple juice or milk, vanilla, and melted butter until smooth. Add a little more liquid if needed.
  10. Glaze: Drizzle the glaze generously over the cooled pound cake.
  11. Serve: Garnish with fresh strawberries and small pineapple pieces if desired. Slice and serve.

Notes

  • Drain the pineapple extremely well and pat the strawberries dry before adding them. Excess moisture can make the pound cake heavy or cause wet pockets around the fruit.
