Description
A delightful Strawberry Red Velvet Cream Cake that combines the rich flavors of red velvet with fresh strawberries and a creamy filling.
Ingredients
- 2½ cups (300 g) all-purpose flour
- 1½ cups (300 g) granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp unsweetened cocoa powder
- 1 cup (240 ml) buttermilk
- 1½ cups (360 ml) vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp white vinegar
- 1–2 tbsp red food coloring
- 500 g fresh strawberries, diced
- ¼ cup (50 g) granulated sugar (for filling)
- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
- 2 cups (480 ml) heavy whipping cream, cold
- ½ cup (60 g) powdered sugar
- 1 tsp vanilla extract (for cream)
- 225 g (8 oz) mascarpone or softened cream cheese
- 300–400 g fresh strawberries (for decoration)
- Fresh blueberries, optional
- Powdered sugar, optional
Instructions
- Preheat oven to 175°C (350°F). Grease and line two 8-inch (20-cm) round cake pans.
- Whisk together flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, whisk buttermilk, oil, eggs, vanilla, vinegar, and red food coloring.
- Gradually add the wet ingredients to the dry ingredients and mix just until combined.
- Divide the batter between the pans and bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely.
- Combine diced strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat for 3–5 minutes. Stir in the cornstarch slurry and cook until slightly thickened. Cool completely.
- Beat mascarpone or cream cheese until smooth. Add cold heavy cream, powdered sugar, and vanilla. Whip until thick and fluffy.
- Slice each cake layer horizontally to create 4 thin layers. Place one layer on a serving plate, spread with cream, then add strawberry filling.
- Repeat with the remaining cake layers, cream, and strawberries. Finish with a generous layer of whipped cream on top.
- Arrange whole or halved strawberries and a few blueberries over the top, just like the pictured cake.
- Refrigerate for at least 2 hours before slicing.
Notes
- Ensure the heavy cream is very cold for better whipping.
- For a richer flavor, use high-quality cocoa powder.
- Adjust the amount of red food coloring to achieve desired color.
