Description

A delightful Strawberry Red Velvet Cream Cake that combines the rich flavors of red velvet with fresh strawberries and a creamy filling.


Ingredients

  • 2½ cups (300 g) all-purpose flour
  • 1½ cups (300 g) granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp unsweetened cocoa powder
  • 1 cup (240 ml) buttermilk
  • 1½ cups (360 ml) vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp white vinegar
  • 12 tbsp red food coloring
  • 500 g fresh strawberries, diced
  • ¼ cup (50 g) granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 2 cups (480 ml) heavy whipping cream, cold
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract (for cream)
  • 225 g (8 oz) mascarpone or softened cream cheese
  • 300400 g fresh strawberries (for decoration)
  • Fresh blueberries, optional
  • Powdered sugar, optional

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch (20-cm) round cake pans.
  2. Whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk buttermilk, oil, eggs, vanilla, vinegar, and red food coloring.
  4. Gradually add the wet ingredients to the dry ingredients and mix just until combined.
  5. Divide the batter between the pans and bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely.
  6. Combine diced strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat for 3–5 minutes. Stir in the cornstarch slurry and cook until slightly thickened. Cool completely.
  7. Beat mascarpone or cream cheese until smooth. Add cold heavy cream, powdered sugar, and vanilla. Whip until thick and fluffy.
  8. Slice each cake layer horizontally to create 4 thin layers. Place one layer on a serving plate, spread with cream, then add strawberry filling.
  9. Repeat with the remaining cake layers, cream, and strawberries. Finish with a generous layer of whipped cream on top.
  10. Arrange whole or halved strawberries and a few blueberries over the top, just like the pictured cake.
  11. Refrigerate for at least 2 hours before slicing.
