Description

Ingredients

  • Strawberry Topping
  • 2 cups fresh strawberries, hulled and sliced
  • ½ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 tablespoon lemon juice
  • Cake
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • ¼ cup strawberry juice or additional milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a bowl, combine the melted butter, ½ cup sugar, and lemon juice. Spread the mixture evenly over the bottom of the prepared pan.
  3. Arrange the sliced strawberries over the butter mixture in an even layer.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In a large bowl, beat the softened butter and ¾ cup sugar until light and fluffy.
  6. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  7. Gradually add the dry ingredients, alternating with the milk and strawberry juice. Mix just until combined.
  8. Carefully spread the batter over the strawberries, smoothing the top.
  9. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10–15 minutes.
  11. Run a knife around the edges of the cake. Place a serving plate over the pan and carefully invert the cake onto the plate.
  12. Remove the pan and parchment paper. Let cool slightly before slicing.

Notes

  • Don’t let the cake cool completely in the pan before flipping—it may cause the strawberry topping to stick.
  • Serve warm with whipped cream or vanilla ice cream.
