Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups corn kernels, fresh, frozen, or canned and drained
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh cilantro
  • 1 tbsp lime juice

Instructions

  1. Preheat the oven: Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Season the chicken: Toss chicken with olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  3. Cook the chicken: Heat a large skillet over medium-high heat. Cook the chicken for 5–7 minutes, stirring occasionally, until browned and cooked through.
  4. Make the creamy mixture: In a large bowl, combine cream cheese, sour cream, mayonnaise, garlic, and lime juice. Stir until smooth.
  5. Add the corn: Fold in the corn, ½ cup Monterey Jack, ¼ cup cheddar, and half of the cilantro.
  6. Combine: Add the cooked chicken and stir until everything is evenly coated.
  7. Bake: Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheeses over the top. Bake for 20–25 minutes, until hot, bubbly, and golden around the edges.
  8. Finish: Sprinkle with the remaining cilantro and a little extra chili powder. Serve warm with lime wedges.
