Description
A delicious and easy recipe for stuffed cabbage rolls filled with ground beef and cauliflower rice, topped with a savory tomato sauce.
Ingredients
- 1 large head of green cabbage
- 1 pound ground beef (or ground turkey)
- 1 cup cauliflower rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) diced tomatoes, drained
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F.
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water for about 2-3 minutes, or until the outer leaves are tender.
- Remove the cabbage from the water and let it cool slightly. Carefully peel off 12 leaves and set aside.
- In a large mixing bowl, combine the ground beef, cauliflower rice, onion, garlic, salt, pepper, paprika, oregano, and red pepper flakes. Mix until well combined.
- Lay a cabbage leaf flat on a clean surface. Place about 1/4 cup of the meat mixture at the base of the leaf. Fold in the sides and roll it up tightly, starting from the base. Repeat with the remaining leaves and filling.
- In a large skillet, heat the olive oil over medium heat. Add the tomato sauce and diced tomatoes, stirring to combine.
- Place the stuffed cabbage rolls seam-side down in the skillet. Spoon any remaining sauce over the rolls.
- Cover the skillet and simmer for 25-30 minutes, or until the meat is cooked through. Alternatively, you can transfer the rolls to a baking dish, cover with foil, and bake in the preheated oven for 30-35 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a vegetarian version, substitute the ground beef with lentils or a plant-based meat alternative.
- Add shredded cheese on top of the rolls during the last 10 minutes of cooking for a cheesy twist.
