A delicious and guilt-free dessert that combines the natural sweetness of ripe bananas with a sugar-free cobbler topping.
Ingredients
- 5 ripe bananas, sliced
- 2 tablespoons unsalted butter, melted
- 2 tablespoons sugar-free brown sweetener (such as Swerve Brown or Lakanto Golden)
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (or 1 teaspoon xanthan gum for a lower-carb version)
- 1½ cups almond flour
- ½ cup coconut flour
- ⅓ cup sugar-free granulated sweetener
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 large eggs
- ½ cup unsalted butter, melted
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 2 tablespoons chopped pecans (optional)
- Sugar-free whipped cream (optional)
- Sugar-free vanilla ice cream (optional)
- Ground cinnamon for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8 × 8-inch or 9-inch square baking dish.
- In a large bowl, combine sliced bananas, melted butter, sugar-free brown sweetener, cinnamon, nutmeg, vanilla, lemon juice, and cornstarch (or xanthan gum). Spread the mixture evenly into the prepared baking dish.
- In a medium bowl, whisk together almond flour, coconut flour, sugar-free granulated sweetener, baking powder, salt, and cinnamon. In another bowl, whisk together eggs, melted butter, almond milk, and vanilla. Add the wet ingredients to the dry ingredients and stir until just combined.
- Spoon the batter evenly over the banana filling and sprinkle with chopped pecans, if using.
- Bake for 40–45 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
- Let the cobbler cool for 10–15 minutes before serving. Serve warm with sugar-free whipped cream or sugar-free vanilla ice cream, if desired.
Notes
- Use ripe bananas with brown speckles for the best natural sweetness.
- For a crispier topping, broil for 1–2 minutes at the end of baking, watching carefully.
- Toast the pecans before adding them for a richer flavor.
- Add ½ teaspoon banana extract for an even stronger banana flavor.
- Although this recipe is sugar-free, bananas naturally contain sugar and carbohydrates. Enjoy in moderation if closely monitoring blood sugar.
