Description

A delicious twist on traditional poke cake featuring sweet potatoes and caramel.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 cup cooked and mashed sweet potatoes (about 1 medium sweet potato)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup whipped cream (for topping)
  • Chopped pecans or walnuts (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  4. Add the mashed sweet potatoes, eggs, and vanilla extract to the sugar mixture. Beat until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
  8. Using the handle of a wooden spoon or a skewer, poke holes all over the top of the cake.
  9. Drizzle the caramel sauce evenly over the cake, allowing it to seep into the holes. Let the cake cool completely.
  10. Once cooled, top the cake with whipped cream and garnish with chopped nuts if desired.

Notes

  • For a richer flavor, try adding 1/2 cup of chopped dark chocolate or chocolate chips to the batter.
  • If you prefer a lighter version, substitute half of the oil with unsweetened applesauce.
