Description
A delicious twist on traditional poke cake featuring sweet potatoes and caramel.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 1 cup cooked and mashed sweet potatoes (about 1 medium sweet potato)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup whipped cream (for topping)
- Chopped pecans or walnuts (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
- Add the mashed sweet potatoes, eggs, and vanilla extract to the sugar mixture. Beat until smooth.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
- Using the handle of a wooden spoon or a skewer, poke holes all over the top of the cake.
- Drizzle the caramel sauce evenly over the cake, allowing it to seep into the holes. Let the cake cool completely.
- Once cooled, top the cake with whipped cream and garnish with chopped nuts if desired.
Notes
- For a richer flavor, try adding 1/2 cup of chopped dark chocolate or chocolate chips to the batter.
- If you prefer a lighter version, substitute half of the oil with unsweetened applesauce.
