Ingredients
- 2 large sweet potatoes (about 1.5 pounds), peeled and cubed
- 4 ounces goat cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)
- Salt and pepper to taste
- 1/4 cup chopped walnuts (optional)
- 1 tablespoon honey (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, dried sage, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and lightly browned, stirring halfway through.
- Remove the sweet potatoes from the oven and let them cool for about 5 minutes.
- In a large serving bowl, combine the roasted sweet potatoes with crumbled goat cheese and chopped walnuts, if using.
- Drizzle with honey for added sweetness, if desired, and gently toss to combine.
