Description

A flavorful recipe combining sweet potatoes, goat cheese, and sage, perfect as a side dish or light main course.

Ingredients

  • 2 large sweet potatoes (about 1.5 pounds), peeled and cubed
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)
  • Salt and pepper to taste
  • 1/4 cup chopped walnuts (optional)
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, dried sage, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and lightly browned, stirring halfway through.
  5. Remove the sweet potatoes from the oven and let them cool for about 5 minutes.
  6. In a large serving bowl, combine the roasted sweet potatoes with crumbled goat cheese and chopped walnuts, if using.
  7. Drizzle with honey for added sweetness, if desired, and gently toss to combine.
  8. Serve warm as a side dish or a light main course.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sweet potato mixture before roasting.
  • You can substitute the goat cheese with feta or blue cheese for a different flavor profile.
