Description
A delicious and healthy twist on traditional tacos using cabbage as the base.
Ingredients
- 1 lb ground beef
- 1 small head green cabbage, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 packet taco seasoning
- ½ cup beef broth
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 1 small tomato, diced
- 2 green onions, sliced
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 5–7 minutes, breaking it apart as it browns.
- Add the onion and garlic. Cook for 2–3 minutes, until softened.
- Stir in the chopped cabbage and cook for 5–7 minutes, stirring occasionally, until it begins to soften.
- Sprinkle in the taco seasoning, salt, and black pepper. Pour in the beef broth and stir well.
- Cover and simmer for 5–8 minutes, until the cabbage is tender but not mushy.
- Remove the lid and cook for another 2–3 minutes to let excess liquid evaporate.
- Sprinkle cheddar and Monterey Jack evenly over the top. Cover and cook for 2–3 minutes, until the cheese is melted.
- Top with diced tomato and green onions.
- Serve hot with your favorite taco toppings such as sour cream, avocado, jalapeños, or salsa.
Notes
- For extra taco flavor, add a squeeze of fresh lime juice just before serving.
