Ingredients
- 2 cups frozen tater tots
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (for garnish)
Instructions
- Preheat your oven to 425°F. Spread the frozen tater tots in a single layer on a baking sheet and bake for 25-30 minutes, or until golden and crispy, turning halfway through for even cooking.
- While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula as it cooks, about 5-7 minutes.
- Once the sausage is cooked, sprinkle the flour over the sausage and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
- Gradually pour in the milk while stirring constantly to avoid lumps. Add the garlic powder, onion powder, black pepper, and salt. Continue to cook, stirring frequently, until the gravy thickens, about 5-7 minutes.
- In a separate skillet, fry the eggs to your liking (sunny-side up, over-easy, or scrambled).
- To assemble the bowls, divide the crispy tater tots among four bowls. Top each bowl with a generous scoop of sausage gravy, an egg, and a sprinkle of shredded cheddar cheese.
- Garnish with sliced green onions and serve immediately.
