Ingredients

  • 4 boneless, skinless chicken breasts, about 170200 g each
  • 15 mL olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 30 g unsalted butter
  • 150 g mushrooms, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 120 g Monterey Jack cheese, shredded
  • 120 mL chicken broth
  • 120 mL heavy cream
  • 15 mL Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ tsp Italian seasoning
  • ¼ tsp black pepper

Instructions

  1. Prepare the chicken: If the chicken breasts are thick, gently pound them to an even thickness. Season both sides with salt, pepper, paprika, garlic powder, and onion powder.
  2. Sear: Heat olive oil in a large oven-safe skillet over medium-high heat. Cook chicken for 4–5 minutes per side, until browned. Transfer to a plate.
  3. Cook the vegetables: Reduce heat to medium. Add butter, mushrooms, and onion. Cook for 6–8 minutes, until softened and lightly browned. Add garlic and cook for another 30 seconds.
  4. Make the sauce: Pour in chicken broth, heavy cream, Worcestershire sauce, Dijon mustard, Italian seasoning, and black pepper. Simmer for 3–4 minutes, stirring occasionally.
  5. Smother the chicken: Return the chicken to the skillet and spoon the mushroom-onion mixture and sauce over each piece.
  6. Add cheese: Sprinkle Monterey Jack evenly over the chicken.
  7. Bake: Transfer the skillet to a 200°C oven and bake for 8–10 minutes, until the cheese is completely melted and the chicken reaches 74°C internally.
  8. Serve: Let the chicken rest for 5 minutes, then spoon the creamy mushroom sauce over the top.
