Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 large carrot, julienned or shredded
  • 1 red bell pepper, thinly sliced

  • ½ cup fresh cilantro, chopped
  • ½ cup green onions, sliced
  • ½ cup roasted peanuts, roughly chopped
  • ¼ cup fresh mint leaves
  • 1 avocado, diced — optional
  • 80 g creamy peanut butter
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 12 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 23 tbsp warm water, as needed
  • ½1 tsp red pepper flakes, optional

Instructions

  1. Make the Dressing: Whisk together the peanut butter, lime juice, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Add warm water 1 tablespoon at a time until the dressing becomes smooth and pourable.
  2. Prepare the Vegetables: Add the green cabbage, red cabbage, carrot, bell pepper, cucumber, cilantro, green onions, and mint to a large bowl. Toss gently to combine.
  3. Add the Dressing: Pour the Thai peanut dressing over the vegetables. Toss thoroughly until everything is evenly coated.
  4. Finish: Add the chopped peanuts and avocado, if using. Give the salad one final gentle toss.
  5. Serve immediately for maximum crunch, or refrigerate for 20–30 minutes to let the flavors develop.

  • Optional Additions: Grilled chicken, shrimp, crispy tofu, edamame, sesame seeds, rice noodles.
