Description
A refreshing and crunchy Thai-inspired salad packed with vibrant vegetables and a creamy peanut-lime dressing.
Ingredients
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 large carrot, julienned or shredded
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- ½ cup fresh cilantro, chopped
- ½ cup green onions, sliced
- ½ cup roasted peanuts, roughly chopped
- ¼ cup fresh mint leaves
- 1 avocado, diced — optional
- 80 g creamy peanut butter
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1–2 tsp grated fresh ginger
- 1 clove garlic, minced
- 2–3 tbsp warm water, as needed
- ½–1 tsp red pepper flakes, optional
Instructions
- Make the Dressing: Whisk together the peanut butter, lime juice, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Add warm water 1 tablespoon at a time until the dressing becomes smooth and pourable.
- Prepare the Vegetables: Add the green cabbage, red cabbage, carrot, bell pepper, cucumber, cilantro, green onions, and mint to a large bowl. Toss gently to combine.
- Add the Dressing: Pour the Thai peanut dressing over the vegetables. Toss thoroughly until everything is evenly coated.
- Finish: Add the chopped peanuts and avocado, if using. Give the salad one final gentle toss.
- Serve immediately for maximum crunch, or refrigerate for 20–30 minutes to let the flavors develop.
Notes
- Optional Additions: Grilled chicken, shrimp, crispy tofu, edamame, sesame seeds, rice noodles.
- For a stronger Thai-inspired flavor, add 1–2 teaspoons of chili garlic sauce to the dressing.
- For extra freshness, squeeze a little more lime over the salad just before serving.
