Description
Thinly Sliced Baked Squash is a delicious and crispy dish made from fresh squash or zucchini, seasoned and baked to perfection.
Ingredients
- 2 medium yellow squash or zucchini
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup panko breadcrumbs
Instructions
- Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
- Slice the squash into very thin rounds, about ⅛ inch thick.
- Pat the slices thoroughly dry with paper towels. This helps prevent them from becoming watery.
- Place the squash in a bowl and toss gently with olive oil, garlic powder, Italian seasoning, paprika, salt, and black pepper.
- Arrange the slices in a single layer, slightly overlapping if necessary. Avoid piling them up.
- Sprinkle the Parmesan and panko evenly over the squash.
- Bake for 18–25 minutes, until the squash is tender and the edges are golden and crispy.
- Broil for 1–2 minutes at the end for an extra-toasty Parmesan crust, watching carefully.
- Let cool for 2–3 minutes, then serve warm.
Notes
- For the crispiest results, use a large baking sheet and leave space between the slices.
- If the squash is especially juicy, sprinkle it lightly with salt, let it sit for 10 minutes, then pat it very dry before seasoning.
