Description

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup toffee bits (such as Heath Bar bits)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Extra toffee bits for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  5. Fold in the toffee bits gently until evenly distributed throughout the batter.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  9. While the cakes are cooling, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  10. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of whipped cream on top. Place the second layer on top and spread more whipped cream over the top and sides of the cake.
  11. Garnish the cake with extra toffee bits for decoration.
