Ingredients

  • 8 ounces whole wheat pasta
  • 2 medium zucchinis, sliced into thin rounds
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced zucchini to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften.
  4. Stir in the diced tomatoes (with their juice), oregano, and basil. Season with salt and pepper. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld.
  5. Add the cooked spaghetti to the skillet, tossing to combine. If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.
  6. Serve hot, topped with grated Parmesan cheese and fresh basil leaves if desired.
