Description

Tortilla Rolls with Feta are a delightful snack idea, perfect for gatherings or as a light meal. These rolls are filled with a creamy feta and herb mixture, fresh vegetables, and wrapped in soft tortillas.

Ingredients

  • 4 large flour tortillas (8–10 inches)
  • 6 oz cream cheese, softened
  • 6 oz feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 1 cup fresh baby spinach
  • 1 medium cucumber, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1/4 small red onion, finely sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the cheese filling. In a medium bowl, combine the softened cream cheese, crumbled feta, Greek yogurt, lemon juice, garlic powder, and black pepper. Mix until creamy, leaving a few small feta pieces for texture.
  2. Add the herbs. Stir in the chopped parsley and dill until evenly distributed throughout the filling.
  3. Prepare the vegetables. Wash and thoroughly dry the spinach. Slice the cucumber, bell pepper, and red onion into thin strips. Pat the cucumber dry to prevent the tortillas from becoming soggy.
  4. Spread the filling. Lay a tortilla flat on a clean work surface. Spread a thin, even layer of the feta mixture over the entire tortilla, leaving about a 1/2-inch border around the edges.
  5. Layer the vegetables. Arrange the spinach, cucumber, red bell pepper, and red onion in a thin layer over the cheese mixture. Avoid overfilling so the tortillas roll neatly.
  6. Roll tightly. Starting at one edge, roll each tortilla firmly into a log. Keep the filling tucked inside as you roll.
  7. Chill the rolls. Wrap each tortilla roll tightly in plastic wrap and refrigerate for about 20 minutes. This helps the filling firm up and makes slicing easier.
  8. Slice and serve. Remove the wraps and trim the ends if desired. Cut each roll into 1–1 1/2-inch pinwheels using a sharp knife. Arrange on a serving platter and garnish with fresh dill or parsley.

Notes

  • Prevent sogginess: Dry the vegetables thoroughly before assembling.
  • Make them extra flavorful: Add sun-dried tomatoes, sliced black olives, or a pinch of crushed red pepper flakes.
  • Add protein: Include sliced grilled chicken, turkey, or smoked salmon.
  • For a Mediterranean twist: Add hummus in a thin layer beneath the feta filling.
  • Make ahead: Prepare the rolls up to 24 hours in advance and keep them tightly wrapped in the refrigerator. Slice shortly before serving.
