Description

A flavorful Tuscan-inspired dish featuring zucchini and mushrooms, perfect as a side or main course.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 ounces mushrooms, sliced (button or cremini)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the sliced mushrooms and cook for 5-7 minutes until they are browned and have released their moisture.
  4. Add the sliced zucchini, oregano, basil, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
  5. If using, sprinkle the grated Parmesan cheese over the top and stir until melted and well combined.
  6. Remove from heat and garnish with fresh basil leaves if desired. Serve warm.

Notes

  • For a heartier dish, add cooked chicken or sausage to the medley.
  • To make it vegan, omit the Parmesan cheese or substitute with a vegan cheese alternative.
