Description
A flavorful Tuscan-inspired dish featuring zucchini and mushrooms, perfect as a side or main course.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 8 ounces mushrooms, sliced (button or cremini)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the sliced mushrooms and cook for 5-7 minutes until they are browned and have released their moisture.
- Add the sliced zucchini, oregano, basil, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
- If using, sprinkle the grated Parmesan cheese over the top and stir until melted and well combined.
- Remove from heat and garnish with fresh basil leaves if desired. Serve warm.
Notes
- For a heartier dish, add cooked chicken or sausage to the medley.
- To make it vegan, omit the Parmesan cheese or substitute with a vegan cheese alternative.
