Description
Twice-Baked Potatoes with Cheddar & Chives are a delicious and creamy side dish, perfect for any occasion.
Ingredients
- 4 large baking potatoes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 60 g unsalted butter, softened
- 120 g sour cream
- 120 ml milk
- 180 g shredded cheddar cheese, divided
- 3 tbsp fresh chives, finely chopped
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 200°C. Scrub the potatoes thoroughly and pat them dry. Pierce each potato several times with a fork.
- Rub with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50–60 minutes, or until completely tender when pierced with a knife.
- Let the potatoes cool for about 10 minutes. Slice each potato lengthwise in half.
- Carefully scoop out the potato flesh, leaving about 5 mm of potato inside the skin so the shells remain sturdy.
- Place the potato flesh in a bowl. Add butter, sour cream, milk, 120 g cheddar, chives, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mash until creamy but slightly chunky.
- Spoon the mixture evenly back into the potato shells, gently mounding it on top.
- Place the filled potatoes on a baking sheet and sprinkle with the remaining cheddar.
- Return to the oven and bake at 200°C for 15–20 minutes, until the cheese is melted and bubbling and the tops are lightly golden.
- Sprinkle with additional fresh chives and serve hot.
Notes
- Add crispy cooked bacon to the filling.
- Mix in chopped jalapeños for a spicy version.
- Add cooked broccoli for a cheesy broccoli-potato filling.
- Substitute some cheddar with Monterey Jack or Gruyère.
- Top with a dollop of sour cream before serving.
- For extra-crispy potato skins, brush the empty shells with a little olive oil and return them to the oven for 5 minutes before adding the filling.
