Ingredients

  • 2 lbs Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • 2 tbsp balsamic glaze
  • 2 tbsp chopped fresh parsley
  • ¼ cup cooked crumbled bacon, optional
  • 2 tbsp toasted chopped pecans, optional

Instructions

  1. Preheat the oven: Heat oven to 425°F. Place a large baking sheet in the oven while it preheats for extra-crispy Brussels sprouts.
  2. Season the Brussels sprouts: In a large bowl, toss the Brussels sprouts with olive oil, garlic, Italian seasoning, garlic powder, smoked paprika, salt, and black pepper.
  3. Arrange: Carefully remove the hot baking sheet. Spread the Brussels sprouts out in a single layer, placing as many cut-side down as possible. Don’t overcrowd the pan.
  4. Roast: Roast for 20–25 minutes, without stirring, until the cut sides are deeply golden and crispy.
  5. Add Parmesan: Sprinkle the Parmesan over the Brussels sprouts and return to the oven for another 3–5 minutes, until the cheese is melted and lightly browned.
  6. Finish: Transfer to a serving dish and drizzle with balsamic glaze.
  7. Garnish: Sprinkle with fresh parsley and, if desired, add crispy bacon and toasted pecans.
  8. Serve: Serve immediately while the Brussels sprouts are hot and crisp.
