Description

Ultimate Strawberry Earthquake Cake is a delicious dessert that combines a moist strawberry cake with a creamy cream cheese layer and delightful toppings.

Ingredients

  • 1 box strawberry cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 cup chopped fresh strawberries
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • ½ cup chopped strawberries
  • ½ cup shredded sweetened coconut, optional

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, milk, and vanilla. Beat until smooth. Fold in the chopped strawberries.
  3. Spread the strawberry cake batter evenly into the prepared baking dish.
  4. Beat the softened cream cheese and melted butter until smooth. Gradually add the powdered sugar and vanilla, mixing until creamy.
  5. Spoon dollops of the cream cheese mixture over the cake batter. Gently swirl it into the batter with a knife, creating a marbled effect. Don’t overmix.
  6. Sprinkle the white chocolate chips, chopped strawberries, and coconut over the top.
  7. Bake for 40–45 minutes, or until the edges are set and the center is slightly soft and gooey.
  8. Let the cake cool for at least 20–30 minutes before slicing. The center will firm up as it cools.
  9. Serve warm or chilled for a rich, gooey strawberry dessert.

Notes

  • For a richer flavor, use fresh strawberries.
