Description

A delicious and hearty warm potato salad featuring crispy bacon, fresh herbs, and a tangy dressing.


Ingredients

  • 2 lbs baby potatoes, halved
  • 6 slices bacon, chopped
  • ½ small red onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 2 green onions, sliced
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook the potatoes: Place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 10–12 minutes, or until fork-tender. Drain well.
  2. Cook the bacon: While the potatoes cook, heat a large skillet over medium heat. Add the chopped bacon and cook until crisp. Transfer the bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon drippings in the skillet.
  3. Sauté the aromatics: Add the red onion to the skillet and cook for 2–3 minutes until softened. Add the garlic and cook for another 30 seconds.
  4. Make the dressing: Add the olive oil, apple cider vinegar, Dijon mustard, honey, garlic powder, smoked paprika, salt, and pepper to the skillet. Stir well and warm for 1–2 minutes. Do not let the dressing boil.
  5. Combine: Add the warm potatoes to a large bowl. Pour the warm dressing over them and gently toss until the potatoes are coated.
  6. Add the toppings: Fold in the crispy bacon, sautéed onion and garlic, parsley, dill, and green onions.
  7. Rest and serve: Let the salad sit for 5–10 minutes so the potatoes can absorb the dressing. Serve warm.

Notes

  • Don’t rinse the cooked potatoes after draining. Their warm, slightly starchy surface helps the dressing cling beautifully to every piece.
