Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar

  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded coconut and chopped pecans.
  7. In another bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
