Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
In a large bowl, whisk together the eggs, sugar, and oil until smooth.
Fold in the shredded zucchini, making sure it’s evenly distributed.
Stir in the chopped bacon and grated Cheddar.
In another bowl, sift together flour, baking soda, baking powder, salt, and black pepper.
Add the dry mixture into the wet mixture. Pour in the milk and stir gently until just combined (do not overmix).
Pour batter into the prepared loaf pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.
