Ingredients
  

  • 4 large eggs
  • 4 strips of bacon
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional: salsa or hot sauce for serving

Method
 

  1. In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on a paper towel to drain excess grease.
  2. In the same skillet, melt the butter. Whisk the eggs in a bowl and season with salt and pepper. Pour the eggs into the skillet and scramble until fully cooked, about 3-4 minutes.
  3. Crumble the cooked bacon and add it to the scrambled eggs. Stir in the shredded cheddar cheese until melted and well combined.
  4. Warm the flour tortillas in a separate skillet or microwave for about 10-15 seconds until pliable.
  5. Divide the egg, bacon, and cheese mixture evenly among the tortillas. Fold in the sides and roll up tightly to form burritos.
  6. If desired, place the burritos seam-side down in the skillet and cook for 1-2 minutes on each side until golden brown and crispy.
  7. Serve warm with salsa or hot sauce on the side.
