Ingredients
  

For the Beef:
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
For the Dressing:
  • ¾ cup sour cream
  • ¾ cup salsa your favorite kind
  • Fresh lime juice to taste
For the Salad:
  • 6 cups chopped romaine lettuce
  • 10 oz grape or cherry tomatoes halved
  • ½ small red onion chopped
  • 1 cup shredded cheese cheddar or Mexican blend
  • ½ cup canned corn drained
  • ½ cup black beans drained and rinsed
  • ½ avocado sliced or chopped
  • 1 cup Doritos broken into bite-sized pieces
  • 1 tablespoon chopped fresh cilantro optional
  • Salt and pepper to taste

Method
 

  1. Cook the beef: In a skillet over medium-high heat, add olive oil. Once hot, add the ground beef and seasonings (chili powder, garlic powder, onion powder, smoked paprika, and cumin). Cook for 8 to 10 minutes, breaking up the meat until fully browned. Drain excess fat if needed and let cool slightly.
  2. Make the dressing: In a small bowl, mix together sour cream and salsa. Add fresh lime juice to taste. If the dressing is too thick, add a little water or extra lime juice to thin it out.
  3. Assemble the salad: In a large mixing bowl, combine chopped romaine, tomatoes, red onion, cheese, corn, black beans, avocado, and cilantro.
  4. Add the beef and chips: Once the beef has cooled a bit, add it to the salad. Toss in the Doritos.

  6. Dress and serve: Toss the salad with the dressing or drizzle on top. Season with salt and pepper. Serve immediately for the best texture.

Notes

  • To keep the Doritos crunchy, add them right before serving.
  • You can swap sour cream for Greek yogurt for a lighter dressing option.
  • Spice level can be adjusted by choosing a mild or hot salsa.
  • Leftover components can be stored separately and assembled fresh later.
