- Heat oil in a large, deep frying pan over medium heat. Add the beef mince and cook for about 5 minutes, stirring occasionally, until browned.
- Add chopped onion, garlic, celery, green peppers, and Cajun seasoning to the pan. Sauté for 5 more minutes until the vegetables are softened.
- Add the rinsed long grain rice, tomato puree, and beef stock. Season with salt and pepper to taste. Stir well to combine.
- Cover the pan and let the mixture simmer for 15–20 minutes, stirring occasionally, until the rice is tender and the liquid has been absorbed.
- Preheat the grill to high. Fluff the rice with a fork, then sprinkle the grated cheese evenly over the top.
- Place the pan under the grill for 3–5 minutes until the cheese is melted and golden.
- Garnish with sliced spring onions if desired. Serve hot and enjoy!

You can substitute the beef mince with turkey or chicken for a lighter version.
