Ingredients

For the Creamy Mixture
  • 16 oz Cream cheese 2 packages
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 cups Heavy whipping cream cold
  • 1 cup Sweetened condensed milk
For the Fresh Fruits
  • 2 cups Fresh strawberries halved
  • 1.5 cups Green grapes
  • 1 cup Red grapes
  • 1.5 cups Pineapple chunks well-drained
  • 1.5 cups Mandarin orange segments drained
For the Topping
  • 1 cup Graham cracker crumbs
  • 0.5 cup Shredded coconut optional

Equipment

  • Large disposable aluminum foil tray

Method

Preparation Steps
  1. Prepare the tray by taking a large disposable aluminum foil tray, ideally 9 × 13 inches and about 2–3 inches deep.
  2. In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy, about 2–3 minutes.
  3. In a separate bowl, pour in the cold heavy whipping cream and whip it until stiff peaks form, which should take about 4–5 minutes.
  4. Gradually mix the sweetened condensed milk into the cream cheese mixture, stirring until just combined, then gently fold in the whipped cream.
  5. Fold in the fresh fruits, reserving some for topping later. Aim to incorporate a colorful mix.
  6. Spread the creamy fruit mixture evenly into the prepared foil tray, smoothing the top with a spatula.
  7. Arrange the reserved fresh fruit on top, and sprinkle with graham cracker crumbs and shredded coconut if desired.
  8. Cover the tray with plastic wrap and refrigerate for at least 2–4 hours before serving.
