In a large pot, heat the olive oil over medium heat. Add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the chicken broth and bring to a boil. Stir in the orzo and broccoli florets. Reduce heat to a simmer and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
Return the cooked chicken to the pot. Stir in the cheddar cheese, Parmesan cheese, cream cheese, and red pepper flakes (if using). Mix until the cheeses are melted and everything is well combined.
Taste and adjust seasoning with more salt and pepper if needed. Serve warm.
