Ingredients
  

  • 2 medium zucchinis grated (about 2 cups)
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon red pepper flakes optional
  • Cooking spray or olive oil for greasing

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  3. In a separate bowl, mix together the mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, black pepper, flour, baking powder, and red pepper flakes (if using).
  4. Add the squeezed zucchini to the cheese mixture and stir until well combined.
  5. Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the top is set.
  7. Remove from the oven and let it cool for a few minutes before slicing into sticks. Serve warm with marinara sauce for dipping.
