Method
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out each sheet of puff pastry to smooth out creases. Cut each sheet into 4 equal squares.
- Place 1 tablespoon of chocolate chips in the center of each pastry square. Fold the corners of the square towards the center to form a triangle, sealing the edges by pressing down with a fork.
- Brush the tops of the croissants with the beaten egg. If desired, sprinkle a little granulated sugar on top for added sweetness and crunch.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up. Allow to cool slightly before serving.

Notes
- For a richer flavor, try adding a teaspoon of vanilla extract to the chocolate chips before filling the pastry.
- You can also substitute chocolate chips with Nutella or almond paste for a different twist.
