Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and salt. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup sugar, vanilla extract, and eggs. Mix until fully combined and creamy.
Pour the cream cheese mixture over the crust in the baking dish, spreading it evenly.
In a small bowl, mix together 1/4 cup sugar and ground cinnamon. Sprinkle this mixture evenly over the cheesecake layer.
Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
Once chilled, drizzle the melted butter over the top and sprinkle with additional cinnamon sugar if desired. Cut into bars and serve.
